It's mud season! I love mud; it keeps them occupied for hours. Sure, clean up is an issue, but it's a quick season, and I love to watch the things they think up.
Merry Christmas! Here are a few highlights from this past year: Deb hosted her youngest siblings at the barn and put them to work, then gave them a chance to ride Gypsy. She is still with CCF as a Medic and enjoys her job. She has been trail riding a lot, travelling and competing with her horse Gypsy, and branched out in her costume making hobby to make a Medieval costume for a friend's horse. The biggest change in Deb's life this past year is the addition of a cat named Toby! Lewis and Kaitlynn are enjoying their home and and yard. Kaitlynn is working as a legal secretary and has made a beautiful home for them both. When not working, Kaitlynn loves to make candles and bread, including sourdough. She is enjoying building their home library with more classics than she can shelve (be still, my heart), reading, and playing piano. Lewis built two beautiful bookcases for their growing library. He works hard to keep the highway safe and has won some awards, including Trooper of the Y...
Dear Mom, Remember when we first met? I was a scrappy little guy, recently released from a really noisy place and taken in by a young man and woman. I remember the first time we met- the couple brought me to your house. I knew there was something about you, and I think you felt it too. I knew that the young man was dear to you, and you to him, so I figured you were alright. I loved visiting your house, especially when I got to do sleep overs! The treats and extra portions of food and walks and sleeping on your bed were awesome. But life got weird and confusing. The young woman was gone a lot. Then the young man left for a really long time. Then another dog came to live with me. He was kind of a bully but I put up with him. When we both came over to your house, I always knew I was your favorite. I tried to look for the young man and managed to climb out their windows at least once, and I opened their front door by myself, but I could not find him. Your backyard was amazing! It was ...
Want to dive into mostly guilt-free chocolate goodness? Here you go: Melt 1/2 cup chocolate chips and set aside. I used sugar-free chips. Mix together 1/4 cup butter with 1/3 cup xylitol until well blended. Add 2 eggs, 1 teaspoon vanilla and a tablespoon of coconut oil, and melted chips. Add 1 1/4 cups Almond flour, 1/2 teaspoon each of baking soda, baking powder and salt. Add an additional handful or two of more chocolate chips. Blend, then transfer to a greased loaf pan. Bake at 350° for 40 minutes. Let sit in pan for 10 minutes, then transfer to a plate or cutting board. But wait, the chocolate goodness is NOT over. Melt about 1/2 cup chocolate chips and a tablespoon or so of butter. (I did use regular chips for this part because I just felt like it). Drizzle over the bread, and lick the bowl. Pour a cup of coffee and enjoy a (mostly) sugar- and gluten-free treat!
